Victoria Beckham is known for many things: her career as the impeccably stylish Posh Spice of the Spice Girls, her successful eponymous fashion line, and her equally successful beauty brand. But there's another thing Beckham is associated with: her carefully thought-out lunch menu.
During a lunch meeting at the San Vicente West Village club, Beckham set both the topic of conversation (the upcoming Victoria Beckham Beauty products, which are under strict embargo until the summer and beyond, and she also mentioned the Portofino '97 fragrance) and the menu. The three-course lunch consisted of a salad with tender lettuce leaves, asparagus, avocado and tahini; the main course was baked salmon with broccoli, carrots and a bright lemon dressing. For dessert, there was a serving of fresh berries and chocolate chip cookies with sea salt.

Victoria Beckham's perfect lunch
According to the star's husband, David Beckham, this is Victoria's typical lunch. In 2022, he said in one of his podcasts: “I'm married to a woman who has eaten pretty much the same thing for the last 25 years. Since we met, Victoria has only eaten grilled fish and steamed vegetables. She very rarely allows herself to deviate from that.” And, as it turns out, it really is very tasty.

It's also a nutritious and well-balanced meal, says registered dietitian Carrie Gans. “It provides protein and omega-3 fatty acids from the salmon, fiber and antioxidants from the vegetables and berries, and healthy fats from the avocado and tahini,” she explains. She also adds that you can add a source of complex carbohydrates for extra energy.

Salad for lunch
Starting your lunch with a salad has become a popular trend in the health-conscious world as fiber and blood sugar control become more important. “It's an easy way to add more vegetables and fiber, which helps you feel fuller longer, slows down your eating, and helps keep your blood sugar levels more stable afterward,” says Gans.

According to the National Institutes of Health, about 95% of American adults do not consume the recommended daily amount of fiber. “You don't have to start every meal with a salad. The key is to get enough fiber and vegetables throughout the day.”
Berries for dessert
Berries are a surprisingly good dessert. “Berries are a great choice because they're naturally sweet and packed with fiber, vitamin C, and antioxidants,” explains Gans. Although cookies can also be part of a healthy diet: “Favorite foods in moderation are a realistic and balanced way to eat.” Baked salmon can be a good choice for lunch. Especially if it helps you get even a little closer to Victoria Beckham's figure.
